Hearty Fall Stew

This hearty stew is a quick and easy celebration of some of the most delicious fall season vegetables. If you want to taste fall in a bowl, this is the way to do it!

Vegan

Preparation Time: 25 – 30 Minutes

Ingredients (Makes 1 Hearty Bowl):

  • 1 Cup of Low-Sodium Vegetable Broth
  • 3/4 Cup of Baby Spinach
  • 1 Cup of Cubed Butternut Squash
  • 1 Cup of Sliced Parsnips
  • 2 Diced Crimini Mushrooms
  • 1 Cup of Shredded Cabbage
  • 1/2 Tablespoon of Tomato Paste
  • 1/4 Teaspoon of Sea Salt
  • 1/2 Teaspoon of Nutmeg

Instructions:

Add vegetable broth, tomato paste, and spices into a medium-size pot. Make sure to mix spices and tomato past into the vegetable broth until all are mixed together well. Once your base is mixed, add all other ingredients into the pot. Turn heat on medium, cover, and simmer for about 15-20 minutes. You will know the stew is done when parsnips and butternut squash can be pierced easily with a fork. Allow stew to cool for about 2-5 minutes before serving.
